If you’re a dim sum enthusiast in Hong Kong, you’ll have heard of Aqua Restaurant Group’s Dim Sum Library before. With two locations – one in Pacific Place, Admiralty and one in Elements, Tsim Sha Tsui West – Dim Sum Library represents a refreshing evolution of the time-honoured Cantonese tradition of dim sum. Classic delicacies are given a modern (and delicious) makeover, served all day in an elegant 21st century interpretation of a traditional tea room.
Now, Dim Sum Library’s culinary masters are back at it again with a new delectable dim sum tasting menu. This time around, they’ve steamed up four brand-new aromatic renditions of the mighty har gau (crystal shrimp dumplings) – all packed full of flavour. Hero ingredients such as oregano, aged mandarin peel, dill and yuzukoshō are infused into the dumpling wrappers and thoughtfully paired to complement the delicate crustacean filling. One bite is all it takes to see what all the hype is about. Everything is presented elegantly and the har gau itself is delightful: the skin is delicate but holds together, and the modern flavours add an interesting twist to this traditional local favourite.
Although we wouldn’t blame you if you only had har gau dumplings for the entire meal, if you fancy some heartier options, don’t leave without trying the steamed Alaskan black cod fillets with Chinese chives and Sichuan pepper or the Charcoal Yuxiang crispy pork dumpling!
