The Questions
1) Could you tell us a bit about yourself and about Avobar?
I was born in Russia but grew up and lived most of my life in London. I was always interested in fashion from a young age so I went on to study a Masters degree in Fashion Media Production at the London College of Fashion. The Avobar project is a creative endeavour for me, combining elements in my life that matter to me most; having the freedom of creativity in the concept while diving into the topic of wellness and how to help others live a healthier life.
2) What is your relationship with avocado?
It’s truly my go-to. I have avocado on rye toast every other day for breakfast, I incorporate it into most of my salads, and of course there’s the meals at Avo, which I never tire of. I always feel good after having the fruit, I feel full, never heavy, and it’s as tasty as you make it (provided you get good quality avocado to begin with).

3) How did you come up with the menu for the avocado dishes?
The menu is designed to be balanced in a way that a group of friends, all with different requirements and lifestyles, could have options for themselves each. We focus on ingredients and like to keep it playful and vibrant. Our hero ingredient, the avocado, is incredibly versatile, which allows us to create such a flexible and inclusive menu: it is gluten free, a great substitute for dairy due to its creamy texture, and can be paired with virtually anything. The element of avocado symbolises the positivity, versatility and superfood quality that we bring to everything we do.

4) What was it like growing up in Russia?
Really fun! I have a huge extended family there, so there were always events and gatherings happening. Also, remember staying up on the landline phone for hours and getting shouted at by your parents for keeping the line ‘busy’? Pre-internet and mobile phones childhood was special.
