Carna at Mondrian Hong Kong Launches New Butcher’s Menu

On the 39th floor of Mondrian Hong Kong, the legendary Tuscan butcher Dario Cecchini has brought his signature philosophy of “nose-to-tail” dining to Asia, and now he’s taking it a step further with Carna’s new Butcher’s Menu. Available Monday to Wednesday by pre-order, it’s an evening that celebrates the animal in its entirety — with no shortcuts, no fuss, and every plate arriving in deliberate succession.



The experience begins with a choice of antipasti: delicate Carpaccio di Manzo, crispy Fritta di Trippa (crispy beef tripe), Prosciutto Toscano with pickled watermelon, Peposo Toscano (Tuscan-styled stewed pepper beef), octopus salad, or Panzanella (fresh tomatoes with cucumber, croutons, strawberry gazpacho). The meal follows with a choice of the following for sharing: caramelised pork belly with carnaroli rice; or charcoal-grilled fennel-flavoured beef and pork sausage.



Then comes the pièce de résistance: charcoal-grilled steaks meant for sharing. From the Controfiletto di Manzo (Australian Jack's Creek M6-7 Sirloin steak 400g) to the Bistecca di Costola — an imposing Italian Carima-Rare bone-in ribeye (+HK$388) — every cut is sourced with care, dry-aged for depth, and finished over fire for that signature smoky char. The family-style sharing evokes the conviviality of a Tuscan table, where the meal is as much about conversation and camaraderie as it is the food.


Sides, or contorni, are simple yet considered: creamy mashed potatoes and tender sautéed broccolini complement the robust flavours of the meat, while the meal closes on a sweetly familiar note with Carna’s tiramisù di casa — layers of coffee-soaked Savoiardi, mascarpone cream, and rich chocolate — perfect for lingering over with a final sip of wine.


The Butcher's Menu, available on Mondays, Tuesdays and Wednesdays, is priced at HK$888 per person, including two glasses of wine or a zero-ABV pairing.
